Ingredients
- 1/2 cup Fresh edible pine needles, positively identified, unsprayed eastern white pine (Pinus strobus) or another edible species confirmed by a qualified local source; chopped
- 1/4 cup Granulated sugar
- 2 tbsp Fresh lemon juice
- 3 cups Spring or filtered water, chlorine-free
Instructions
Before harvesting or using any needles, positively identify the tree. Use only an edible pine species confirmed by a qualified local source. Never use yew (Taxus), which is highly toxic. Do not use roadside, sprayed, diseased, or chemically treated ornamental material.
Wash and sanitize a 1-quart jar and utensils. Rinse the confirmed edible pine needles with cool water, drain well, and chop them into roughly 1/2-inch pieces.
Add the chopped needles, sugar, lemon juice, and water to the jar. Stir until the sugar dissolves, leaving about 1 inch of headspace.
Cover with a clean breathable cloth or paper towel secured with a band. Ferment out of direct light at about 68–72°F for 24–48 hours, stirring with a clean utensil once or twice daily.
When the liquid smells fresh and resinous-citrusy and shows fine bubbles, strain it through a fine-mesh strainer. Discard any batch showing fuzzy mold, slime, or putrid/off odors.
Check acidity before sealed conditioning. The finished ferment should measure pH 4.6 or lower; 4.2 or lower gives additional safety margin. If it has not acidified adequately, do not seal it for room-temperature conditioning.
Transfer to a clean carbonation-rated bottle with 1–2 inches of headspace. Seal and condition at room temperature about 12–24 hours, checking pressure frequently, then refrigerate promptly.
Chill at least 6 hours before opening. Open very slowly over a sink and away from your face. Serve cold.
