Ingredients
- 1 cup Fresh blackberries, ripe and unspoiled; rinse lightly only if needed
- 3 tbsp Granulated sugar
- 3 cups Spring or filtered water, chlorine-free
Instructions
Wash and sanitize a 1-quart jar and all utensils. Inspect the berries and discard any that are moldy, leaking, or spoiled.
Add the blackberries to the jar and crush them thoroughly with a clean muddler or spoon.
Add the sugar and about 2 1/2 cups of the water. Stir until the sugar is mostly dissolved, then add enough remaining water to leave about 1 inch of headspace.
Cover the jar with a clean breathable cloth or paper towel secured with a band. Keep at cool room temperature, ideally about 68–72°F, out of direct sunlight.
Ferment 24–48 hours, stirring with a clean utensil a few times during the day so floating fruit stays wet. Look for small bubbles, a fresh berry aroma, and a lightly tangy flavor. If you see fuzzy mold or smell anything putrid, discard the batch.
Strain through a fine-mesh strainer into a clean pitcher, pressing gently on the berries. For additional safety and repeatability, verify the soda is at pH 4.6 or lower before sealed bottle conditioning.
Transfer to a clean container specifically rated for carbonation, leaving 1–2 inches of headspace. A reusable plastic soda bottle is an easy way to monitor pressure by feel; if using glass, use only pressure-rated fermentation bottles.
Seal and bottle-condition at room temperature for about 12–24 hours, checking frequently. Refrigerate as soon as a plastic bottle feels firm or the soda is clearly carbonated. Do not leave an actively fermenting sealed bottle unattended for extended periods.
Chill completely for at least 6 hours before opening. Open slowly over a sink and away from your face, then serve cold.
