Ingredients

1x

Cheesecake Filling

  • 8 full-fat block cream cheese, softened
  • 1 powdered sugar
  • 1 vanilla extract
  • 1 lemon zest, finely grated
  • 1 fresh strawberries, finely diced

Graham Cracker Coating

  • 1 graham cracker crumbs, finely crushed
  • 2 unsalted butter, melted
  • 1 granulated sugar

Optional Garnish

  • fresh strawberries, finely diced, for garnish (optional)

Instructions

Wash and thoroughly dry the strawberries. Remove the stems. Finely dice enough strawberries to produce 1/2 cup. Place the diced berries on a clean paper towel and gently blot away excess surface moisture. Set aside. Fresh strawberries contain substantial moisture — drying them thoroughly before folding into the filling helps prevent it from becoming loose or watery.

Place the softened full-fat block cream cheese in a medium mixing bowl. Using a hand mixer or sturdy spatula, beat until smooth and creamy. Add the powdered sugar, vanilla extract, and finely grated lemon zest. Beat or stir until completely incorporated and smooth, scraping down the sides of the bowl as necessary.

Gently fold the prepared diced strawberries into the cream cheese mixture. Do not aggressively beat the strawberries into the filling — the goal is to retain small pieces of real strawberry throughout the cheesecake mixture.

Cover the bowl and refrigerate for approximately 60–90 minutes, or until the mixture is firm enough to scoop and shape. Do not skip this chilling stage — the filling contains real strawberries and softened cream cheese and will initially be too soft to form clean bites.

90 min

While the filling chills, combine 1 cup finely crushed graham cracker crumbs, 2 tbsp melted unsalted butter, and 1 tbsp granulated sugar in a shallow bowl. Stir until evenly combined — the crumbs should resemble lightly damp sand. Allow the mixture to cool completely before using it to coat the chilled cheesecake filling. Do not roll cold cheesecake filling in hot melted-butter crumbs.

Once the filling is sufficiently firm, use a small cookie scoop or spoon to portion approximately 1 tablespoon of filling per bite. The recipe should yield approximately 16 bites. Work relatively quickly so the cream cheese mixture remains cold.

With clean hands, gently roll each portion into a ball. The bites do not need to be mathematically perfect. If the filling becomes too soft or sticky while shaping, stop and return it to the refrigerator for 15–20 minutes, then continue. Do not compensate by adding excessive graham cracker crumbs directly to the cheesecake filling.

Roll each cheesecake bite in the prepared graham cracker mixture. Gently press the crumbs onto the exterior so they adhere, coating all sides. Transfer finished bites to a parchment-lined plate or small sheet pan.

Refrigerate the finished cheesecake bites for at least 30 minutes before serving. This allows them to firm back up after handling.

Serve chilled. If desired, top or serve with a few additional pieces of fresh strawberry immediately before serving. Do not add fresh strawberry garnish far in advance because it can release moisture.

Chef's Notes & Storage

USE BLOCK CREAM CHEESE: Use full-fat block-style cream cheese rather than whipped cream cheese from a tub. Tub-style cream cheese generally contains more moisture and can make the bites difficult to shape. DRY THE STRAWBERRIES: Excess strawberry moisture is the enemy of a firm no-bake cheesecake bite. Dry the berries thoroughly before dicing and blot the diced fruit before folding it into the filling. KEEP EVERYTHING COLD: If the cheesecake mixture becomes difficult to handle at any point, refrigerate it again rather than adding unnecessary dry ingredients. LEMON ZEST: The small amount of lemon zest is there to brighten the strawberry and cream cheese flavors. It should not make the dessert taste strongly of lemon. GRAHAM CRACKER COATING: Allow the butter-and-graham mixture to cool before rolling the chilled cheesecake bites in it. STORAGE: Store Strawberry Cheesecake Bites in an airtight container in the refrigerator. Best within 2 days. They may be refrigerated for approximately 3 days, but the fresh strawberries will gradually release moisture and soften the texture. Keep refrigerated until shortly before serving. Do not leave cream-cheese-based bites sitting at room temperature for extended periods.
