Ingredients

  • 4 cups fresh ripe pineapple, peeled, cored, and cubed
  • 4 cups cold water, divided
  • 1/4 cup granulated sugar, or to taste
  • 1 tbsp fresh lime juice, optional (optional)
  • ice, for serving

Instructions

Remove the pineapple crown and rind, then remove the tough core and cut the fruit into chunks.

Place the pineapple, 2 cups cold water, and sugar in a blender.

Blend on high until completely smooth.

Pour through a fine-mesh strainer into a pitcher, pressing gently to extract the liquid. Straining is recommended for a cleaner, more refreshing texture.

Stir in the remaining 2 cups cold water.

Taste. If the pineapple is very sweet, no additional sugar should be necessary. If desired, stir in the lime juice for a slightly brighter finish.

Refrigerate until thoroughly chilled.

Stir well before serving.

Pour over ice and serve immediately.

Chef's Notes & Storage

Fresh, ripe pineapple makes a substantial difference here. Avoid making the drink excessively sweet; good agua de piña should retain the pineapple's natural acidity.
