Ingredients
Cake
- 2 whole limes, zest and juice, reserve some juice for icing
- 3 whole eggs
- 175 g sugar
- 50 g whole milk
- 65 g neutral oil
- 1 tablespoon vanilla bean paste
- 1/4 teaspoon salt
- 250 g all-purpose flour
- 2 1/2 teaspoons baking powder
Icing
- 1 cup powdered sugar
- 1 teaspoon lime juice
- 2 tablespoons water
Instructions
Preheat oven to 325°F (163°C). Prepare a cake or loaf pan with butter or parchment lining.
Zest and juice the limes, keeping enough lime juice aside for the icing.
Combine the eggs and sugar in a bowl and whisk until well blended.
Mix in the whole milk, neutral oil, vanilla bean paste, lime zest, and lime juice.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
Gently combine the dry ingredients with the wet mixture just until incorporated. Avoid overmixing.
Transfer the batter to the prepared pan.
Bake at 325°F (163°C) for approximately 45–55 minutes, checking for doneness toward the end of the baking window. A tester should come out clean.
50 minAllow the cake to cool before icing.
For the icing, whisk together the powdered sugar, 1 teaspoon lime juice, and 2 tablespoons water until smooth. Adjust only if necessary for a pourable glaze consistency.
Drizzle the icing over the cooled cake and allow it to set before slicing.
