  • 2 bags Green tea bags
  • 1 cups Water

  • 2 cups Cubed seedless watermelon
  • 2 tbsp Fresh lime juice
  • 1 tsp Honey (optional)
  • 1 Kosher salt
  • as needed Ice

Instructions

Heat 1 1/2 cups water to approximately 175°F.

Steep green tea bags approximately 3 minutes.

Remove tea bags without squeezing.

Cool completely and refrigerate until cold.

Blend the watermelon until completely liquefied.

Strain through a fine-mesh strainer for a smoother drink if desired.

Measure approximately 1 cup watermelon juice.

Combine it with the chilled green tea and fresh lime juice.

Add ONE very small pinch of kosher salt. The drink should NOT taste salty. The salt is only intended to sharpen the watermelon flavor.

Stir thoroughly.

Taste before adding honey.

If the watermelon is naturally sweet, omit the honey.

If necessary, add 1–2 teaspoons honey.

Serve very cold over ice.

Garnish with watermelon or lime if desired.

Chef's Notes & Storage

NEEDS_IMAGE_REVIEW Naturally caffeinated with green tea. Caffeine content varies by tea and brewing method. This recipe depends heavily on ripe watermelon. Cold, ripe summer watermelon will produce a dramatically better drink than pale underripe fruit. Green tea brewing standard: Heat water to approximately 175°F. Steep for approximately 3 minutes. Remove tea bags without squeezing. Allow tea to cool before assembling the iced beverage.
