Ingredients

  • 1 1/2 lb 80/20 ground beef
  • 1 tsp Kosher salt
  • 1/2 tsp Black pepper
  • 4 slices Cheddar or American cheese slices
  • 4 Hamburger buns
  • 1 tbsp Butter

Instructions

Divide ground beef into four equal portions. Shape gently into patties slightly wider than the buns. Do not heavily compress the meat.

Season both sides with salt and black pepper.

Heat a cast-iron skillet over medium-high camp stove or campfire heat.

Place patties in the hot dry skillet. Cook approximately 3–4 minutes without constantly moving them.

Flip. Cook approximately another 3–5 minutes depending on thickness. Ground beef must reach 160°F internally.

Place one cheese slice over each burger during the final minute.

Transfer burgers to a plate. Reduce heat slightly.

Butter the cut sides of the buns. Toast buns cut-side down in the same skillet for approximately 30–60 seconds until golden.

Assemble burgers with desired toppings.

Chef's Notes & Storage

80/20 BEEF: A little fat is important for a juicy burger and also helps prevent sticking in cast iron. DO NOT PRESS: Do not press cooked patties with a spatula; that forces juices out. FOOD SAFETY: Ground beef must reach 160°F.
