Ingredients

Rice

  • 1 jasmine rice
  • 2 water

Beef

  • 1 ground beef
  • 3 garlic cloves, minced
  • 1 fresh ginger, freshly grated
  • 1 low-sodium soy sauce
  • 2 brown sugar, packed
  • 1 rice vinegar
  • 1 toasted sesame oil
  • 1 crushed red pepper flakes (optional)

Serving

  • 1 English cucumber, thinly sliced
  • 2 scallions, thinly sliced
  • 1 toasted sesame seeds
  • 1 mayonnaise
  • 1 sriracha, to taste

Instructions

Rinse the jasmine rice until the water runs mostly clear. Combine rice and water in a saucepan.

Bring to a boil, cover, reduce heat to low, and cook according to package directions, generally about 15 minutes.

15 min

Remove from heat and let stand covered for 5-10 minutes before fluffing.

10 min

Meanwhile, whisk soy sauce, brown sugar, rice vinegar, sesame oil, and optional red pepper flakes together.

Heat a large skillet over medium-high heat. Add the ground beef. Cook for 6-8 minutes, breaking it into small crumbles, until browned.

7 min

Drain excessive rendered fat if necessary.

Add garlic and ginger. Cook for approximately 30 seconds until fragrant.

0 min

Pour the soy mixture into the skillet. Cook for 2-3 minutes, stirring frequently, until the beef is glossy and the sauce has reduced enough to coat it.

2 min

Combine mayonnaise and sriracha in a small bowl.

Divide hot rice among four bowls. Top with the beef. Add sliced cucumber and scallions. Sprinkle with sesame seeds. Drizzle lightly with spicy mayo or serve it alongside. Serve immediately.

Chef's Notes & Storage

BROWN THE BEEF: Allow the beef to develop some browned edges before adding the sauce. ADD GARLIC LATE: Adding garlic and ginger after the beef browns prevents them from burning during the longer cooking stage. SAUCE: Reduce the sauce until it coats the meat rather than leaving liquid pooling in the skillet.
