Ingredients

  • 6 cups chopped kale
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1/4 red onion, thinly sliced
  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 garlic clove, grated
  • 1/4 cup Parmesan

Instructions

Prepare the hard-boiled eggs safely: hard-boil and peel the eggs.

Wash and thoroughly dry the greens and vegetables; chop into bite-size pieces.

Whisk the classic Caesar-style dressing ingredients until smooth and emulsified; thin with a spoonful of water if needed.

Combine greens, tomatoes, cucumber, and onion in a large bowl and toss with enough dressing to lightly coat.

Top with the prepared hard-boiled eggs, drizzle with additional dressing, and serve immediately.
