- 4 whole Salmon fillets, approximately 5-6 oz each
- 1 lb Broccoli florets
- 1 cup Uncooked jasmine or long-grain white rice
- 2 tbsp Olive oil, divided
- 2 tbsp Dijon mustard
- 1 tbsp Honey
- 1 tbsp Fresh lemon juice
- 2 clove Garlic cloves, minced
- 1 tsp Kosher salt, divided
- 1 tsp Black pepper
- for serving Lemon wedges, for serving
Instructions
Preheat oven to 425°F. Cook rice according to package directions.
Toss broccoli with 1 tablespoon olive oil, approximately 1/4 teaspoon salt and black pepper. Spread broccoli across a large sheet pan. Roast for 10 minutes.
Meanwhile, whisk together Dijon mustard, honey, lemon juice, garlic, remaining 1 tablespoon olive oil and remaining salt.
Pat salmon dry. Remove the sheet pan from the oven. Push broccoli slightly outward to make room for salmon. Place salmon on the sheet pan.
Brush salmon generously with honey-mustard glaze. Return to the oven. Roast approximately 10-14 minutes, depending on thickness and desired doneness.
Broccoli should be browned at the edges and tender. Serve salmon with rice and broccoli.
Spoon any remaining cooked glaze or pan juices over the salmon. Serve with lemon wedges.
