Ingredients

Main

  • 1 1/2 lb Boneless skinless chicken breasts or thighs, pat dry; slice breasts into thinner cutlets if using
  • 12 oz Cherry tomatoes
  • 12 oz Pasta (rigatoni, penne, or fettuccine)
  • 1/4 cup Heavy cream
  • 1/2 cup Freshly shredded Parmesan cheese, freshly shredded, not powdered
  • 1/2 cup Reserved pasta water, reserve closer to 1 cup; use only as much as needed for a smooth, glossy sauce
  • 1 tbsp Olive oil

Chicken Seasoning

  • 2 tsp Cajun seasoning (for chicken)
  • 1 tsp Granulated garlic (for chicken)
  • 1 tsp Granulated onion (for chicken)
  • 1/2 tsp Smoked paprika (for chicken)
  • 1/4 tsp Black pepper (for chicken)

Sauce Seasoning

  • 1 tsp Cajun seasoning (for sauce)
  • 1/2 tsp Granulated garlic (for sauce)
  • 1/2 tsp Granulated onion (for sauce)
  • 1/2 Lemon, juiced (half), juice of 1/2 lemon
  • Fresh parsley, chopped, for garnish

Instructions

Bring a large pot of well-salted water to a boil. Cook the pasta until al dente according to package directions.

Before draining, reserve at least 1/2 cup pasta water — preferably closer to 1 cup so additional water is available if needed. Drain the pasta. Do not rinse.

While the pasta cooks, pat the chicken dry. Slice breasts into thinner cutlets or evenly sized pieces for faster, more even cooking.

Combine the chicken seasoning: 2 tsp Cajun seasoning, 1 tsp granulated garlic, 1 tsp granulated onion, 1/2 tsp smoked paprika, and 1/4 tsp black pepper. Coat the chicken evenly.

Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned on the outside and fully cooked through — cook to an internal temperature of 165°F at the thickest portion.

Transfer the chicken to a plate and let rest briefly. Slice or chop into bite-size pieces if not already cut.

Reduce skillet heat to medium. Add the cherry tomatoes and cook until they begin to soften, blister, and release some of their juices.

Add the sauce seasoning: 1 tsp Cajun seasoning, 1/2 tsp granulated garlic, and 1/2 tsp granulated onion. Stir briefly until fragrant. Do not burn the spices.

Add the heavy cream and approximately 1/4 cup of the reserved pasta water. Stir to combine. Reduce heat to medium-low.

Add freshly shredded Parmesan gradually while stirring. Allow the Parmesan to melt into the sauce. Add more reserved pasta water as needed until the sauce becomes smooth, glossy, and able to coat the pasta. Do not make the sauce soupy.

Add the cooked pasta and toss thoroughly to coat. Return the chicken and any accumulated juices to the skillet and toss gently.

Add the juice of 1/2 lemon. Taste. Adjust consistency with a small amount of additional pasta water if needed. Adjust Cajun seasoning only if needed — Cajun seasoning blends vary significantly in salt and spice level, so do not automatically add extra salt before tasting.

Remove from heat once the pasta is glossy and fully coated. Garnish with chopped fresh parsley. Serve immediately.

Chef's Notes & Storage

Adapted from the original creator recipe. IMPORTANT SAUCE TARGET: The sauce should be creamy, glossy, Parmesan-forward, lightly tomato-infused, and Cajun-spiced. It should NOT be soupy, greasy, broken, overly thick, or loaded with excessive cream. The reserved pasta water and Parmesan are important for emulsification. The heavy cream should support the sauce, not dominate it. CHEF'S NOTES: 1. Cajun seasoning varies — different blends have different levels of salt, cayenne, paprika, and garlic. Taste before adding extra salt. 2. Save extra pasta water — reserve closer to 1 cup even though the recipe calls for 1/2 cup. You may not need all of it. 3. Add Parmesan off very high heat — excessive heat can cause the cheese to clump or make the sauce greasy. 4. Do not overcook the chicken — cook to 165°F and stop. 5. Lemon goes in near the end — this keeps the finished sauce bright and prevents the citrus flavor from disappearing. STORAGE: Refrigerate leftovers in an airtight container for up to approximately 3-4 days. When reheating, add a small splash of water, milk, or broth as needed to loosen the sauce. Reheat gently — avoid excessively high heat, which can break the sauce or dry out the chicken. SCALING: 1× = 4 servings, 0.5× = 2 servings, 1.5× = 6 servings, 2× = 8 servings. Scale all ingredient quantities proportionally. Do not mathematically multiply cooking time. For larger batches, use a larger skillet, cook chicken in batches if needed, avoid overcrowding, and cook pasta in an appropriately sized pot. For reserved pasta water, scale the displayed quantity proportionally but use only as much as needed to create a smooth, glossy sauce. ALLERGENS: Contains WHEAT (pasta) and MILK (cream, Parmesan). Depending on the exact pasta used, additional allergens may apply. Do not claim gluten-free unless gluten-free pasta is actually used.
