  • 1 tsp Vanilla extract

  • 3 cup (180ml) Heavy cream
  • 1 tbsp (20g) Glucose syrup or light corn syrup

  • 1 pinch Fine sea salt

Whipped Cream

  • 1 cup (240ml) Heavy cream

Finish

  • 1 cup Toasted salted or lightly salted peanuts, roughly chopped
  • 1 tbsp Shaved dark chocolate (optional) (optional)
  • 1 pinch Flaky salt (if needed) (optional)

Instructions

Prepare chocolate cookie crust: Mix crushed cookies with melted butter and salt. If using sandwich cookies, account for their filling when determining butter quantity. Press firmly into 9-inch pie plate. Bake approximately 8-10 minutes at 350°F / 177°C. Cool completely.

Prepare salted peanut butter filling: Beat cream cheese until smooth. Add peanut butter, powdered sugar, vanilla, and salt. Mix until completely homogeneous.

Whip heavy cream separately to medium peaks.

Fold whipped cream into peanut butter mixture in several additions.

Spread into cooled crust. Chill approximately 30-60 minutes before adding ganache.

Prepare bittersweet ganache: Heat cream and glucose until steaming. Pour over chocolate. Let stand approximately 1 minute.

Stir from center outward to create smooth emulsion. Add butter and salt when mixture has cooled slightly but remains warm.

Cool until fluid but no longer hot. Pour a controlled layer over peanut butter filling. Do NOT drown the pie in ganache.

Chill thoroughly, at least 5 hours total.

Whip cream with powdered sugar and vanilla to soft-medium peaks. Top pie shortly before serving.

Finish with toasted chopped peanuts, optional shaved dark chocolate, and a tiny amount of flaky salt if needed.

Chef's Notes & Storage

Texture target: crisp crust, silky peanut butter filling, soft ganache, light whipped cream, crunch from peanuts. NOT dense peanut butter fudge, overly sweet cheesecake, thick rubbery ganache, or giant candy-bar topping pile. Must be refrigerated. Best quality approximately 3-4 days. Evaluate finished texture before recommending assembled freezing.
