Ingredients
- 8 slices Sturdy sandwich bread
- 1 cup Pizza sauce
- 2 cups Shredded low-moisture mozzarella
Instructions
Heat a cast-iron skillet, griddle, or campfire sandwich iron over moderate heat.
Lay out four slices of bread. Spread each with approximately 2 tablespoons pizza sauce.
Divide mozzarella evenly over the sauce. Top with the remaining bread slices.
If using a nonstick sandwich iron or well-seasoned skillet, cook directly. Place sandwiches onto the hot cooking surface.
Cook approximately 2–3 minutes per side until golden and crisp.
Reduce heat if the bread browns faster than the cheese melts. Cover the skillet briefly with foil or a lid if needed to trap heat.
Remove when the cheese is fully melted. Rest approximately 1 minute. Slice and serve.

Chef's Notes & Storage
LOW-MOISTURE MOZZARELLA: It melts cleanly without making the sandwich watery.
SAUCE: Do not overload the bread with sauce.
OPTIONAL VARIATIONS: Pepperoni, cooked sausage, sliced olives, or red pepper flakes can be added, but the core recipe is genuinely 3 ingredients.
