Ingredients

Instructions

  1. Preheat oven to 325°F (163°C). Prepare a cake or loaf pan with butter or parchment lining.
  2. Zest and juice the limes, keeping enough lime juice aside for the icing.
  3. Combine the eggs and sugar in a bowl and whisk until well blended.
  4. Mix in the whole milk, neutral oil, vanilla bean paste, lime zest, and lime juice.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  6. Gently combine the dry ingredients with the wet mixture just until incorporated. Avoid overmixing.
  7. Transfer the batter to the prepared pan.
  8. Bake at 325°F (163°C) for approximately 45–55 minutes, checking for doneness toward the end of the baking window. A tester should come out clean.
  9. Allow the cake to cool before icing.
  10. For the icing, whisk together the powdered sugar, 1 teaspoon lime juice, and 2 tablespoons water until smooth. Adjust only if necessary for a pourable glaze consistency.
  11. Drizzle the icing over the cooled cake and allow it to set before slicing.
