Ingredients
- 3/4 cup cup Whole milk
- 3/4 cup cup Heavy cream
- 1/2 cup cup Packed dark brown sugar
- 1 tbsp tbsp Unsalted butter
- 1 tsp tsp Pure vanilla extract
- 1/4 tsp tsp Fine sea salt
Instructions
- Add brown sugar, butter, and 2 tablespoons of the heavy cream to a small saucepan.
- Heat over medium-low heat. Stir continuously until the butter melts and the brown sugar becomes glossy and dissolved, approximately 2-3 minutes.
- Slowly whisk in the remaining heavy cream. Add whole milk.
- Heat gently for another 2-3 minutes. Do not allow the mixture to boil vigorously.
- Remove from heat. Stir in vanilla and sea salt. Taste once slightly cooled. Add only a tiny additional pinch of salt if a stronger salted-caramel profile is desired.
- Cool and transfer to a clean jar. Refrigerate until chilled. Shake before using.

Chef's Notes
Yield: About 1 3/4 cups. Serving size: 2 tablespoons. This uses a brown-sugar caramel approach because it stays smoother and more reliable in a refrigerated creamer than a hard caramelized-sugar sauce. Storage: Refrigerate up to 7 days. Shake before using. Keep refrigerated. Discard if odor, texture, or appearance changes unexpectedly. Dairy-free variation: Substitute a neutral dairy-free butter and oat or coconut-based creamer for the dairy ingredients.
