Chef's Notes
Chef's Notes: Use slightly stale bread - it absorbs custard better without falling apart. Day-old brioche or challah is ideal. Don't oversoak or the bread will disintegrate. Storage: French toast is best fresh, but can be frozen and reheated in a toaster. Scaling: At 0.5x, make 4 slices (2 servings); at 2x, make 16 slices (8 servings). Cook time stays the same per batch.
