Pancetta Truffle Cream Sauce
Make a luxurious truffle cream sauce with reduced stock, double cream, gently rendered pancetta, and a restrained finish of truffle oil.
Ingredients
- 400 ml Good-quality chicken or veal stock
- 150 ml Double/heavy cream (minimum 32-35% fat)
- 60 g Pancetta, sliced very thin
- 0.5 tsp Good-quality truffle oil
- to taste Salt
- to taste Freshly ground black pepper
- 1 sprig Fresh tarragon sprig (optional garnish)
Instructions
- Pour the stock into a medium saucepan and bring to a full boil over high heat.
- Reduce until deeply concentrated. For a rich homemade stock, reducing approximately by half may be sufficient. For a lighter store-bought broth, a greater reduction may be needed. Taste as the stock reduces. It should taste concentrated and satisfying before adding the cream.
- Pass the reduced stock through a fine-mesh sieve into a clean saucepan. Return to the boil.
- Add the cream and stir to combine. Reduce over medium heat, stirring occasionally, until the sauce has reduced approximately by half and coats the back of a spoon.
- While the cream sauce reduces, place the thinly sliced pancetta in a separate cold frying pan. Set over low heat with no additional fat. Render gently until some fat has released and the pancetta becomes lightly translucent. Do not aggressively crisp it.
- Once the cream sauce reaches coating consistency, strain it again through the fine-mesh sieve into a small clean saucepan.
- Reduce the heat to very low. Add the rendered pancetta pieces. Allow them to infuse in the sauce for a few minutes. Taste. Season with salt and freshly ground black pepper as needed.
- Add approximately 1/2 teaspoon truffle oil. Taste before adding more. The truffle should perfume the sauce rather than dominate it.
- If desired, add only a few additional drops of truffle oil immediately before plating.
- Serve over seared steak, pan-fried chicken, or fresh pasta. Optional: finish with a small sprig of tarragon.

Chef's Notes
Stock quality matters because reduction concentrates everything, including weaknesses and excess salt. If using store-bought stock, choose a good-quality product and monitor salt as it reduces. Use cream with approximately 32–35% fat or greater for stable reduction. Pancetta gives a more delicate cured-pork flavor; smoked bacon adds a more obvious smoky note. Truffle oil is powerful. Begin conservatively. The sauce is ready when it coats the back of a spoon. Stock Variation: For concentrated homemade stock, start with approximately 400 ml and reduce by half. For a lighter broth/store-bought stock, begin with approximately 500 ml and reduce by approximately two-thirds. Optional Stock Enrichment: A store-bought stock can optionally be gently simmered with aromatics such as celery, onion, carrot, mushrooms, and optionally chopped raw chicken wings to strengthen the base. These are not part of the primary required ingredient list.
