Ingredients
- 5 Large eggs
- 60 ml Mayonnaise (preferably homemade French-style)
- 1 tbsp Fresh chives, finely chopped
- a few drops Hot pepper sauce (such as Tabasco)
Instructions
- Bring water to a boil. Carefully add the eggs and cook for 9 minutes. Transfer immediately to cold water.
- Cool for 10 minutes, then peel.
- Halve each egg lengthwise. Carefully remove all yolks. You now have 10 egg-white halves and 10 yolk halves. Use 7 yolk halves for the filling. Reserve 3 yolk halves for the mimosa garnish. Fill 8 of the egg-white halves.
- Mash the 7 yolk halves reserved for the filling with a fork.
- Gradually work in the mayonnaise, approximately one tablespoon at a time, until smooth and evenly combined.
- Press the remaining 3 reserved yolk halves through a fine-mesh sieve into a small bowl to create the fine mimosa-style garnish.
- Spoon the yolk-mayonnaise filling into 8 egg-white halves.
- Garnish each filled egg with a pinch of the finely sieved yolk and chopped fresh chives.
- Arrange on a serving dish and serve.

Chef's Notes
Optional variation: For heat, add a few drops of hot pepper sauce to the yolk-mayonnaise filling. The source starts with 5 whole eggs but fills 8 egg-white halves because one whole egg's two yolk halves are used for decoration along with one additional reserved yolk half.
