- 4 fillets salmon fillets, approximately 6 oz each
- ¼ cup white miso
- 3 tbsp mirin
- 2 tbsp sake
- 1 tbsp low-sodium soy sauce
- 1 tbsp granulated sugar
- 1 tsp fresh ginger, finely grated, optional
- scallions, thinly sliced, for garnish

Instructions
- Whisk together white miso, mirin, sake, soy sauce, sugar, and optional ginger.
- Reserve approximately 2 tbsp glaze in a CLEAN bowl before raw fish touches the remaining marinade.

- Arrange salmon skin-side down where applicable.
- Broil approximately 6–10 minutes depending on thickness.
- During the final 1–2 minutes, brush lightly with RESERVED CLEAN glaze.
- Rest 2 minutes. Garnish with scallions and optional sesame seeds.

Chef's Notes
Never reuse raw-fish marinade as finishing glaze unless it has been properly boiled. This recipe avoids that by reserving clean glaze BEFORE marinating. Refrigerate promptly; good for rice-bowl leftovers.
