Honey Nut Cheerios Peanut Butter Honey Bars
Make chewy Honey Nut Cheerios bars with creamy peanut butter, honey, vanilla, and sea salt for an easy homemade cereal snack.
Ingredients
- 4 1/2 cups Honey Nut Cheerios cereal
- 3/4 cup (190 g) creamy peanut butter
- 1/2 cup (170 g) honey
- 2 tbsp (28 g) unsalted butter
- 1 tsp vanilla extract
- 1/4 tsp fine sea salt
- 1/3 cup (45 g) roasted peanuts, roughly chopped
Instructions
- Line an 8×8-inch pan with parchment.
- Place Honey Nut Cheerios in a large bowl.
- Combine peanut butter, honey, and butter in a saucepan.
- Heat over LOW heat, stirring continuously, just until smooth, fluid, and completely combined. Do not aggressively boil.
- Remove from heat.
- Stir in vanilla and salt.
- Pour warm mixture over cereal.
- Fold until cereal is evenly coated.
- Fold in chopped peanuts if using.
- Transfer to prepared pan.
- Press firmly enough for the bars to hold together, but do not pulverize the cereal. Unlike marshmallow bars, these need somewhat firmer compression to create structural integrity.
- Allow to cool and set approximately 1 hour. If the room is very warm, refrigerate briefly to finish setting.
- Lift from pan.
- Cut into 16 bars.

Chef's Notes
TEXTURE TARGET: Chewy, nutty, lightly crisp, honey-forward, peanut-butter-rich. NOT: gooey marshmallow, dry granola bar, crumbly, oily. CHEF'S NOTES: • Use smooth, emulsified peanut butter for the most predictable structure. • Very runny natural peanut butter can change the firmness of the finished bars. • Do not boil the honey mixture aggressively. • The optional peanuts provide extra crunch but are not necessary. ALLERGEN WARNING: Contains peanuts. May also contain wheat (depending on cereal), milk, soy, and tree nuts (depending on facility). Always check individual product labels. STORAGE: Store airtight at room temperature or refrigerate. Best within 5–7 days. SCALING PAN GUIDANCE: • 0.5× (8 bars): Use a loaf pan or smaller square pan. • 1× (16 bars): 8×8-inch square pan. • 1.5× (24 bars): Use a 9×13-inch pan or split between two pans. • 2× (32 bars): Use two 8×8-inch pans.
