Garlic Parmesan Bistro Fries
Make crispy garlic Parmesan fries with restaurant-style double-fried potatoes, fresh garlic, Parmesan, parsley, and a buttery bistro finish.
Ingredients
- 2 lb lb Russet potatoes, about 900 g
- enough for 3 inches depth cups Neutral high-heat frying oil
- 2 tbsp tbsp Unsalted butter
- 3 cloves Garlic cloves, very finely minced or grated
- 1/2 cup cups Parmesan, finely grated, about 45 g
- 2 tbsp tbsp Fresh flat-leaf parsley, finely chopped
- 1/2 tsp, then adjust tsp Fine sea salt
- to taste pinch Freshly ground black pepper (optional)
Instructions
- Prepare and double-fry the potatoes using the technique from Restaurant-Style Double-Fried French Fries: peel and cut into 1/4-inch fries, soak 30 minutes, dry thoroughly, first fry at 325°F (163°C) for 5 to 7 minutes, cool 20 minutes, then second fry at 375°F (190°C) for 2 to 4 minutes until golden and crisp.
- While the final fry batches cook, melt the butter over low heat.
- Add the garlic and cook gently for 30 to 60 seconds until aromatic. Do NOT deeply brown or burn the garlic.
- Immediately after the fries leave the second fry, transfer hot fries to a large bowl.
- Drizzle lightly with the garlic butter.
- Add the Parmesan, parsley, and salt.
- Toss immediately to coat.
- Serve immediately.
Chef's Notes
CRITICAL TEXTURE RULE: Do not drown fries in butter. Use enough to carry garlic flavor and help Parmesan adhere while preserving crispness. This recipe uses the core double-fry technique from Restaurant-Style Double-Fried French Fries. The fries must be fully crisp before tossing with the garlic butter and Parmesan. OPTIONAL VARIATION — TRUFFLE PARMESAN FRIES: Add a very small amount of truffle oil along with the garlic butter for a truffle-Parmesan variation. Do not create a separate canonical recipe for this. SCALER NOTE: At 1.5x and 2x, increase the NUMBER OF BATCHES for frying. Do NOT simply put twice as many potatoes into the fryer at once. FRYING SAFETY: - Use a deep heavy pot with ample headspace. - Do not fill the pot excessively with oil (maximum halfway). - Dry potatoes thoroughly before frying. Never add wet potatoes to hot oil. - Use a thermometer to monitor oil temperature. - Do not leave frying oil unattended. - Do not overcrowd the pot. Fry in batches. - Never use water to extinguish an oil fire. Keep a lid nearby to smother flames.
