- 1 tbsp neutral high-heat oil
- 2 tbsp unsalted butter
- 3 cloves garlic cloves, finely minced
- 1 tsp fresh thyme leaves
- 1 tbsp chopped fresh parsley
Instructions
- Place potatoes in a saucepan and cover with cold water by approximately 1 inch. Season the water generously with salt.
- Bring to a boil, reduce to a steady simmer and cook 12-15 minutes, until the potatoes are completely fork-tender.
- Drain well and return the potatoes to the warm saucepan for about 1 minute to allow excess moisture to evaporate.

- Pat the steak pieces very dry with paper towels. Season with salt and black pepper.
- Heat a heavy skillet, preferably cast iron, over medium-high to high heat until hot.

- Add butter, garlic and thyme.
- Toss the steak through the foaming garlic butter for approximately 30-60 seconds. Do not allow the garlic to burn.
- Remove from heat and toss with parsley.
- Divide Parmesan mashed potatoes between two plates.
- Spoon steak bites and garlic butter over the potatoes and serve immediately.

Chef's Notes
Dry steak and a properly heated pan are critical for browning. If your skillet is small, sear the steak in two batches rather than crowding it. For a more complete plate, serve with roasted asparagus or a simple dressed arugula salad.
