Flourless Chocolate Espresso Crinkle Cookies
Bake flourless chocolate espresso crinkle cookies with dramatic powdered-sugar cracks, crisp edges, and rich fudgy chocolate centers.
Ingredients
- 1 3/4 cups Powdered sugar (for batter)
- 3/4 cup Unsweetened Dutch-process cocoa powder
- 1 tablespoon Instant espresso powder
- 1/4 teaspoon Fine sea salt
- 2 large Egg whites
- 1 large Whole egg
- 1 teaspoon Vanilla extract
- 1/2 cup Semisweet or bittersweet chocolate chips
- 1/3 cup Powdered sugar (for rolling)
Instructions
- In a medium bowl, whisk together 1 3/4 cups powdered sugar, Dutch-process cocoa, espresso powder, and salt until uniform.
- In a separate bowl, lightly whisk 2 egg whites, 1 whole egg, and vanilla until blended but not whipped into a foam.
- Add the wet ingredients to the cocoa mixture. Stir until a very thick, glossy batter forms.
- Fold in the chocolate chips.
- Cover and refrigerate for 45 minutes. The batter should become easier to portion but may remain softer than ordinary cookie dough.
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment.
- Place the remaining 1/3 cup powdered sugar in a shallow bowl. Portion batter into approximately 2-tablespoon portions to make approximately 12 cookies.
- Gently roll each portion into a rough ball with lightly dampened or powdered-sugar-coated hands if needed. Roll heavily in powdered sugar — a generous coating creates stronger white crinkle contrast.
- Arrange on lined sheets with approximately 2 1/2–3 inches between cookies.
- Bake 10–12 minutes until surfaces are dramatically cracked, edges are set, and centers still appear soft. Do not bake until completely dry.
- Let cool on tray for 5 minutes, then transfer to a wire rack.
Chef's Notes
ESPRESSO: Espresso powder deepens the chocolate flavor. The cookies should not taste overwhelmingly like coffee. DUTCH COCOA: Dutch-process cocoa gives these a darker chocolate profile. COATING: Use a generous powdered-sugar layer. A thin dusting may dissolve into the wet surface rather than producing strong cracks. CHILLING: Do not skip the chill. It helps make the flourless batter easier to portion and limits excessive spreading. OVERBAKING: These should retain a soft fudgy center. FORMULATION: There is deliberately no flour, no butter, no oil, and no chemical leavener. The structure comes primarily from sugar, cocoa, and egg proteins. Do not automatically correct the recipe by adding flour.
