Chef's Notes
Chef's Notes: Different barbecue sauces vary in smoke and sweetness. Use a balanced smoky-sweet style rather than an aggressively spicy or molasses-heavy sauce. Do not add ranch dressing, pickle relish, cayenne, ketchup, or cream cheese — the defining structure is mayonnaise, mustard, barbecue, sweetness, vinegar/lemon, and light garlic. Storage: Refrigerate airtight. Use clean utensils. Best used within approximately 5 days. Never return sauce to its storage container after raw food has been dipped into it.
