Ingredients
- 1 1/2 cups ripe mango chunks, chilled
- 1 cup plain whole-milk yogurt
- 1/2 cup cold whole milk
- 1-2 tbsp granulated sugar or honey
- 1/8 tsp ground cardamom
- 1 small pinch kosher salt
- 4-6 ice cubes, optional
- 1 pinch ground cardamom, for garnish
- chopped pistachios, for garnish
Instructions
- Add chilled mango, yogurt, milk, 1 tablespoon sugar or honey, cardamom, and salt to a blender. Blend until completely smooth and creamy.
- Taste before adding additional sweetener. If the mango is naturally very sweet, no additional sugar may be necessary.
- For a colder, slightly thinner lassi, add 4-6 ice cubes. Blend again until smooth.
- If the lassi is too thick, add milk 1 tablespoon at a time until it reaches a thick but drinkable consistency.
- Pour into two chilled glasses. Garnish with a very light dusting of cardamom or chopped pistachios if desired. Serve immediately.
Chef's Notes
MANGO: Ripe, fragrant mango is the primary flavor. Frozen mango may be used but can produce a thicker drink. CARDAMOM: Use a restrained amount. It should perfume the lassi rather than overpower the mango. SWEETNESS: Adjust sugar according to the fruit rather than automatically adding a large quantity.
