Instructions

  1. Add the Greek yogurt to a medium mixing bowl.
  2. Sift or sprinkle the cocoa powder over the yogurt.
  3. Add 2 tbsp peanut butter, maple syrup, vanilla, and a pinch of salt.
  4. Whisk until completely smooth and evenly chocolate-colored.
  5. Taste. If using an especially tart unsweetened Greek yogurt, add a small additional drizzle of maple syrup only if necessary.
  6. Slice the banana immediately before assembly.
  7. Spoon approximately one-quarter of the chocolate-peanut-butter yogurt mixture into the bottom of each of two glasses, jars, or bowls.
  8. Add a layer of banana slices and granola.
  9. Add another layer of chocolate yogurt.
  10. Finish with the remaining banana and remaining granola.
  11. Warm the remaining tablespoon of peanut butter just enough to make it drizzleable.
  12. Drizzle the warmed peanut butter over both parfaits.
  13. If desired, finish with a few mini dark chocolate chips and chopped roasted peanuts.
  14. Serve immediately for the crunchiest granola.

Chef's Notes

COCOA POWDER: Unsweetened cocoa gives the yogurt a true chocolate flavor without turning this into a dessert-level sugar bomb. PEANUT BUTTER: Use smooth conventional or well-stirred natural peanut butter. Very stiff natural peanut butter may need a few seconds of gentle warming before mixing. BANANA: Add banana shortly before serving for the best color and texture. GRANOLA: Keep granola separate until serving if meal-prepping. This preserves the contrast between creamy yogurt and crunchy granola. SWEETNESS: Taste before adding extra maple syrup. Different Greek yogurts vary substantially in tartness. MAKE-AHEAD: Mix the chocolate-peanut-butter yogurt base and refrigerate it in a covered container for up to 3 days. Keep granola, banana, and toppings separately and assemble shortly before serving. Do not assemble the entire parfait several days ahead — granola becomes soft, banana browns, and texture deteriorates.
