Ingredients
- 1 1/2 lb lb Flank steak or sirloin, thinly sliced against the grain
- 1 tbsp tbsp Low-sodium soy sauce
- 1 tbsp tbsp Cornstarch
- 1 tsp tsp Neutral oil
- 1/3 cup cup Low-sodium soy sauce for sauce
- 1/2 cup cup Low-sodium beef broth
- 2 tbsp tbsp Oyster sauce
- 1 tbsp tbsp Brown sugar
- 1 tbsp tbsp Rice vinegar
- 2 tsp tsp Toasted sesame oil
- 1 tbsp tbsp Cornstarch for sauce
- 1 tbsp tbsp Neutral high-heat oil
- 5 cups cup Broccoli florets
- 3 clove Garlic cloves, minced
- 1 tbsp tbsp Fresh ginger, finely grated
- 2 whole Scallions, sliced
- 1 cup cup Uncooked jasmine rice
Instructions
- Cook jasmine rice according to package directions.
- Toss sliced beef with 1 tablespoon soy sauce, 1 tablespoon cornstarch and 1 teaspoon oil. Let stand approximately 10-15 minutes while preparing remaining ingredients.
- Whisk all sauce ingredients until the cornstarch dissolves completely.
- Heat a wok or large skillet over high heat. Add approximately half the high-heat oil. Add beef in a single layer. Cook in batches if necessary. Sear quickly until browned but not overcooked. Transfer beef to a plate.
- Add remaining oil and broccoli. Stir-fry approximately 2 minutes. Add 2-3 tablespoons water. Cover approximately 1-2 minutes to steam the broccoli until bright green and crisp-tender. Uncover.
- Add garlic and ginger. Stir-fry approximately 30 seconds. Return beef to the pan.
- Stir sauce again immediately before adding because the cornstarch settles. Pour sauce into the skillet. Toss continuously for approximately 1-2 minutes until glossy and thickened. Remove from heat.
- Finish with scallions. Serve over jasmine rice.

Chef's Notes
Thinly slicing beef against the grain is one of the most important steps for tender stir-fry. Cook the beef in batches if necessary. An overcrowded skillet steams the meat instead of searing it. Food safety: Cook beef to desired doneness.
