Ingredients
- 3 medium zucchini, cut into fry-shaped batons
- 1/3 cup all-purpose flour
- 2 large large eggs, beaten
- 1 cup panko breadcrumbs
- 1/3 cup grated Parmesan
- 1 tsp Italian seasoning
- 1/2 tsp kosher salt
- 1/2 tsp garlic powder
- 1/2 cup marinara or ranch, for serving
- as needed oil spray
Instructions
- Cut zucchini into fry-shaped batons about 1/2 inch thick. Pat dry with paper towels — dry zucchini holds breading better.
- Set up three dishes: flour, beaten eggs, and panko mixed with Parmesan, Italian seasoning, salt, and garlic powder.
- Dredge each zucchini baton in flour, dip in egg, then coat in panko-Parmesan mixture. Press gently so crumbs adhere.
- Lightly spray with oil spray. Arrange in a single layer in the air fryer basket — do not overcrowd. Cook in batches if needed.
- Air fry at 400°F / 204°C for 8–10 minutes, flipping halfway, until golden and crisp.
- Serve immediately with marinara or ranch. Zucchini fries are best eaten right away.
Chef's Notes
Chef's Notes: Zucchini releases water as it cooks — patting dry before breading and not overcrowding the basket are both critical for crispiness. These do not reheat well; eat immediately. Contains: Milk, Egg, Wheat.
